Kale: A Love Story

As a Kale University graduate and recovering kale addict, I thought it'd be fun to expand upon one of life's most controversial vegetables. It's still difficult for me to walk past a row of kale and resist the urge to eat the whole thing. The dark green, meaty, bitter leaves always put me in a trance...wanting more. This article is part of the recovery process. So thank you for reading. 

Kale is one those veggies that can either take your breath away, or make you run for the hills. Depends on how you're wired I guess. Every bite has a deep earthy flavor that's guaranteed to leaf an impression. 

For me at least, it's hard not to fall in love with the 684% of the Daily Value of Vitamin K per cup of kale. This vitamin loves you right back with it's ability to bind calcium and activate certain proteins for blood clotting! Thank you kale!

No kale love story would be complete without a chapter on its beautiful, luscious antioxidants. The abundance of Beta-Carotene and Vitamin C will keep those pesky oxidants from running rampant in your body. What other food cares for you like that?

Kale wants to keep you around forever, and ever! That's why it lowers your LDL cholesterol and increases your HDL cholesterol over time. It does this even more when you steam it! Steamed Kale....dreaaamy...

Ahhh its minerals... Like a rich vain of gold in a mountain, each leaf's magnesium, potassium and calcium will bring you health for the rest of your days. 

Last, but definitely not least, kale supports you through thick and thin. Its frilly foliage keeps you full without adding to the waist line. With plenty of fiber and protein it helps you be the lean, mean fighting machine you want to be!

Man it helps to get those thoughts on paper. Kale and I have gone through some rough times, but this helps us build a healthy relationship again. 

If you're not a kale lover like me, it's okay. There's plenty of other greens on the farm. Below is a recipe for you, either way.

Recipe for Kale Lovers

Caldo Verde (Portuguese Kale Soup)

INGREDIENTS

  • 2lbs potatoes, peeled
  • 1 onion, peeled and quartered
  • 3 cloves of garlic, minced
  • ½ cup olive oil plus more for serving
  • 1lbs sausage (chorizo, linguiça or kielbasa), thinly sliced
  • 1 bunch kale, thoroughly washed
  • 4 slices bacon, roughly chopped
  • 8 cups chicken (or vegetable) broth, low sodium
  • Salt and pepper to taste

INSTRUCTIONS

  1. Start by cutting the kale into thin ribbons. 
  2. In a heavy bottomed pot, add the peeled potatoes, the quartered onion, the minced cloves of garlic, the olive oil and the chicken broth. Bring it to a boil over high heat and then lower the heat to medium low and cook until the potatoes are tender and ready to be mashed (about 20 min).
  3. Mash the potatoes and bring them back to the pot.
  4. Using a hand blender, blend the soup until smooth. You can also use a regular blender and blend the soup in batches.
  5. Add the kale, stir, and keep cooking for 15 more minutes.
  6. In a large skillet, fry the bacon and the sausage until the bacon is browned.
  7. Add the bacon/sausage mixture to the soup and cook until the soup boils again.
  8. Season with salt and pepper.
  9. Serve hot with extra olive oil.

Recipe for Kale Haters

INGREDIENTS

  • 1 bunch of kale
  • 1 cup of water
  • A Sense of Humor

INSTRUCTIONS

  1. Break kale leaves into 2-inch long pieces by hand. 
  2. Add to a blender with 1 cup of water. 
  3. Blend on high for 2 minutes. 
  4. Pour down the drain. 
  5. Buy spinach and eat.
